Brasserie aspires to appeal to both resort guests and the local market, serving French-inspired cuisine as well as breakfast, lunch, afternoon tea and dinner. Positioned between the arrival lobby and garden, the restaurant sits at the core of the public space of the hotel. The layout has been developed by unifying three functions – arrival lounge area, central bar and banquette counter, and private fine dining space – beneath a large architectural frame. The strong architectural approach is combined with original materials and light, creating an energetic feel between the space and its guests. Stone surfaces are hand-hammered to become visually and tactilely soft, while wooden surfaces are treated using traditional Japanese techniques.
